A refreshing and spicy cucumber noodle salad that combines the crunch of cucumbers with the chewiness of noodles, tossed in a flavorful sesame dressing. Garnished with fresh mint and toasted sesame seeds, this salad is perfect for a light meal or a side dish.

What you need

tbsp rice vinegar

cup sweet corn

green onion

tbsp sesame seed

cucumber

tbsp coconut aminos

pinch sesame oil

tsp ginger

cup fresh mint

tbsp maple syrup
Instructions
1. Salt the cucumbers in a colander. Set aside to strain while you prepare everything else. 2. Cook the noodles according to the package instructions. Drain and rinse with cold water. 3. In a large mixing bowl stir together the vinegar, coconut aminos, maple syrup, sesame oil and ginger. Add the corn, green onions and prepped cucumbers. 4. Add the cooled noodles to the bowl and toss to coat with the sauce. Top with chili crisp if desired and garnish with fresh mint and toasted sesame seeds.
