What you need

banana

tbsp maple syrup

tbsp water

tsp vanilla extract

oz vanilla protein powder
bunch fresh blueberries

tbsp chia seed

cup spelt flour

cup non-dairy milk
Instructions
1: In a medium bowl or meal prep container mix 1 tablespoon of chia seeds with 3 tablespoons of water. Let it sit for about 5-10 minutes until it forms a gel-like consistency. 2: In the same bowl, mash your banana and add the milk, maple syrup, and vanilla extract, and mix well. 3: Gradually stir in the flour, baking powder, and protein powder into the wet ingredients. Stir until just combined. Press in blueberries. 4: Microwave for 3 minutes or until a toothpick comes out dry. 5: When ready to serve, top with plant-based yogurt, fresh fruit, and a sprinkle of cinnamon or granola.
