One Pan Mediterranean Gnocchi

A simple and flavorful Mediterranean-inspired dish made with gnocchi, sweet peas, sweet corn, and grape tomatoes baked together with pesto for a deliciously easy dinner.

What you need

cup nutritional yeast

tsp ground black pepper
bunch kale

oz peas
tbsp italian seasoning
cup fresh basil leaves

lemon
cup walnut

tsp fine sea salt

oz gnocchi

tbsp water

pt grape tomato

clove garlic clove

cup pesto

oz sweet corn

cup red onion

tbsp olive oil
Instructions
1. Line a large baking sheet with parchment paper. 2. Toss all ingredients together on the sheet. 3. Bake at 400F for 25 to 30 minutes, until everything is golden and tender. 4. Remove the stems from your kale and place in boiling water for 3-5 minutes. 5. Add the basil leaves for the last minute. 6. Transfer the kale and basil into ice cold water to blanch and maintain bright green color. 7. Remove the kale and basil from the ice bath and add to a large blender. 8. Add garlic, walnuts, lemon juice, nutritional yeast, salt, pepper, and olive oil, and blend until smooth. 9. Blend in the water to create the pasta sauce consistency.
