What you need

cup baby spinach

tsp ground black pepper

cup vegetable broth
can full-fat coconut milk

tbsp nutritional yeast

bunch parsley

tbsp lemon juice

yellow onion

tbsp italian seasoning

clove garlic clove

tsp fine sea salt

oz button mushrooms

oz pasta
cup oil packed sun dried tomatoes
oz tamari soy sauce
Instructions
1: Cook pasta according to the instructions on the package, while you prepare the sauce. 2: Heat a large skillet over medium heat and add the sundried tomatoes with oil included. 3: Add in the garlic and onion and sauté for 2-3 minutes until fragrant. 4: Add the mushrooms, stir, and sauté until they start to get tender, about 3 to 5 minutes, stirring occasionally. 5: Add the Italian seasoning and tomato paste, and stir for about 30 seconds to caramelize the tomato paste. 6: Add the tamari, coconut milk, vegetable broth, salt, pepper, and nutritional yeast and stir to combine. 7: Increase heat to bring to a boil, and then reduce heat so it’s at a gentle simmer. 8: Gently stir in the pasta and simmer over low heat, uncovered, until the pasta has taken on the color of the sauce, about 5 minutes. Stir occasionally but gently so that the pasta does not break apart. 9: Stir in the spinach and lemon juice. Cook just until spinach is wilted. 10: Top with chopped parsley right before serving.View original recipe
