What you need

avocado

clove garlic clove

tsp olive oil

cup brown rice

tsp garlic powder

tbsp dijon mustard

tsp fine sea salt

tbsp fresh lemon juice

tsp ground black pepper

cup carrot

cup edamame
cup tahini
oz firm tofu

cup cabbage

cup water
cup maple syrup
Instructions
1 Preheat over to 400F. Line a baking sheet with parchment paper. Toss the cubed tofu with the olive oil, sea salt, ground black pepper, and garlic powder. Bake until golden and slightly crisp, about 35 to 40 minutes. 2 While the tofu bakes, make the dressing and prep the remaining ingredients. For the dressing combine the garlic cloves, fresh lemon juice, maple syrup, dijon mustard, tahini, olive oil, and sea salt to a blender or food processor. Blend until smooth, gradually adding the water until the dressing reaches your desired consistency. 3 Assemble the Buddha Bowl. Start with a base of cooked brown rice in your bowl. Arrange the shredded carrots, sliced cabbage, edamame, and avocado slices around the bowl. Add the cooked tofu to the center or side of the bowl. Drizzle the prepared dressing over the salad. Garnish with cilantro and sprinkle hemp seeds on the avocado slices. 4 Serve the Buddha bowl immediately and enjoy! For meal prep, add the dressing right before servicing.View original recipe
