What you need

cup coconut oil

tbsp ground flaxseed

tbsp baking powder

tsp salt

tsp ground cinnamon

cup molasses

tsp fresh lemon juice

tbsp water

tbsp coconut sugar

tsp ground ginger

cup spelt flour

cup non-dairy milk
Instructions
1: Preheat your oven to 425F. Lightly spray or grease an 11" x 17" or similar cookie sheet. 2: In a small bowl, mix together the flaxseed and water to make a thick flax egg. Let rest for 5 minutes before using. 3: In a medium mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, ginger, and allspice. 4: In another bowl mix the molasses, milk, oil, lemon juice, and flaxseed mixture. 5: Add the wet mixture to the dry ingredients. Mix until just combined; some lumps may remain, that’s okay. 6: Pour mixture into the prepared pan and sprinkle with cinnamon. 7: Bake until golden brown and cooked through, about 15 minutes (an inserted toothpick should come out dry when cooked through). 8: To serve use cookie cutters to form gingerbread men and drizzle with maple syrup.View original recipe
