What you need

ramen noodles

cup vegetable broth

tbsp red curry paste

yellow onion

red bell pepper

tbsp low-sodium soy sauce

tofu

cup coconut milk

cup cashew nut

tbsp maple syrup

tbsp extra-virgin olive oil
Instructions
1: Heat olive oil in a large, deep pan over medium heat. 2: Add the bell peppers and onions and sauté until tender. 3: Stir in the curry paste and let cook for 1 minute. 4: Add the squares of ramen noodles, tofu, cabbage, vegetable broth, coconut milk, tamari, maple syrup, and peanuts. 5: Cover the pan with a lid and bring to a gentle simmer. 6: Let simmer for 3 minutes, then open the lid and stir until the noodles are starting to soften and the sauce is combined. 7: Return the lid and simmer for an additional 3 to 5 minutes until the noodles are cooked through and the vegetables are soft. 8: Top with fresh cilantro and a squeeze of lime juice.
