Creamy Orzo Alfredo

A creamy and comforting orzo dish with an alfredo sauce made from cannellini beans and nutritional yeast, paired with broccoli florets, perfect for a vegan dinner.

What you need

cup broccoli florets

tbsp lemon juice

tsp fine sea salt

cup nutritional yeast

can canned white cannellini beans
fresh parsley

tbsp olive oil

clove garlic clove

cup sweet onion

cup non-dairy milk
Instructions
1. Bring a large pot of water to a boil, and add a pinch of sea salt. Add the orzo and boil until tender, about 8 to 10 minutes. Strain, then add it back to the pot and cover until the sauce is done. 2. While the orzo cooks, make the alfredo sauce. Strain and rinse the beans. Heat 1 tablespoon of the olive oil in a medium pan over medium heat. Once warm, add the chopped onion and garlic and sauté for 5 minutes until fragrant and the onion is translucent. Stir in the beans and saute until warm. Remove from heat. 3. Add the bean, onion, and garlic mixture to a high-powered blender along with the unsweetened milk, nutritional yeast, lemon juice, remaining olive oil, and sea salt. Blend until very smooth. 4. Pour the sauce into the pot with the cooked orzo and heat over low-medium heat. Add the broccoli florets and cook until warm. Garnish with fresh parsley and enjoy!
