bunch cilantro

cup edamame

cup carrot

avocado
cup tahini

cup cabbage

oz hemp seeds
cup maple syrup

tbsp fresh lemon juice

cup water

tsp ground black pepper

clove garlic clove

Instructions
1: Preheat oven to 400F. Line a baking sheet with parchment paper. 2: Toss the cubed tofu with the olive oil, sea salt, ground black pepper, and garlic powder. Bake until golden and slightly crisp, about 35 to 40 minutes. 3: While the tofu bakes, make the dressing by combining garlic cloves, fresh lemon juice, maple syrup, dijon mustard, tahini, olive oil, and sea salt in a blender. Blend until smooth, gradually adding water to reach desired consistency. 4: Assemble the Buddha Bowl with a base of cooked brown rice, topped with shredded carrots, sliced cabbage, edamame, and avocado slices. 5: Add cooked tofu to the bowl and drizzle the dressing over the salad. Garnish with cilantro and sprinkle hemp seeds on the avocado slices. 6: Serve the Buddha bowl immediately and enjoy! For meal prep, add dressing right before serving.View original recipe
