Spinach Artichoke Dip

A healthy and creamy spinach artichoke dip made with raw cashews, garlic, cauliflower, and a blend of vegan ingredients. This dish is perfect for serving with tortilla chips or veggies and makes for a great appetizer or snack.

What you need

head cauliflower florets

tbsp lemon juice

tbsp nutritional yeast

garlic

cup raw cashews

cup water

tbsp dijon mustard

tsp onion powder

cup vegan mayonnaise

tbsp miso

tsp fine sea salt

can artichoke heart quarters

bunch spinach
Instructions
1: Preheat oven to 350°F. Grease an oven-safe dish and set aside. 2: In a large microwave-safe bowl, combine cashews, garlic, cauliflower, and water. Cover lightly with plastic wrap. Microwave on High until the cauliflower and cashews are soft, about 5 to 7 minutes. 3: Add softened veggie mixture to a blender and blend until smooth. 4: Add the mayonnaise, nutritional yeast, miso, mustard, lemon juice, salt, and pepper and blend until smooth. 5: Add the artichokes and spinach and pulse (don’t blend) until just combined. 6: Transfer to the prepared oven dish and bake until bubbly, about 30 minutes.
