A deliciously creamy Alfredo pasta made healthier by removing high-saturated fat and cholesterol ingredients, while still full of flavor. This vegan Alfredo sauce uses brown rice pasta, a variety of healthy ingredients, and is perfect for a quick dinner.

What you need

oz brown rice pasta

cup nutritional yeast
clove garlic

cup unsweetened almond milk

tbsp lemon juice

cup cannellini beans

cup sweet onion

tsp fine sea salt
Instructions
1: Bring a large pot of water to a boil, then add the pasta and cook according to package instructions. Drain, then add it back to the pot and cover until the sauce is done. 2: Meanwhile, strain and rinse the beans. 3: Heat 1 tbsp of the olive oil in a small pan over medium heat. Once hot, add the chopped onion and garlic and sauté for 5 minutes until fragrant and the onion is translucent. Stir in the beans and sauté until warm. Remove from heat. 4: Add the bean, onion, and garlic mixture to a high-powered blender along with the unsweetened milk, nutritional yeast, lemon juice, remaining olive oil, and salt.
