A delicious Vegan Sushi Bake made with cooked sushi rice, chickpeas, vegan mayo, sriracha, and topped with various fresh ingredients like avocado and pickled ginger. This dish can be enjoyed warm, at room temperature, or cooled.

What you need

avocado

edamame

tsp old bay seasoning
cup sushi rice

pickled ginger

oz sesame seed

bunch scallion

cup vegan mayonnaise

can chickpea

Sushi Nori

fl oz mayo

tbsp low-sodium soy sauce
Instructions
1: Cook your rice according to package instructions. Once done, place in a large bowl in the fridge to cool. 2: Preheat your oven to 350°F. Make your vegan salmon mix: Add the drained chickpeas to a bowl and mash with a fork or potato masher. Stir in the mayo, sriracha, soy sauce, old bay, and green onions. 3: Assemble: In a baking dish, add the cooled rice and press into an even layer. Place two large nori sheets on top to cover the rice. Layer the vegan salmon mix on top. 4: Bake until warm, about 15-20 minutes. Remove from the oven and add toppings.
