What you need

oz tofu

tbsp tomato paste

cup baby spinach

cup vegetable broth

tbsp nutritional yeast
can full-fat coconut milk

yellow onion

bunch parsley

tbsp lemon juice

tsp ground black pepper

clove garlic clove
cup oil packed sun dried tomatoes

tsp fine sea salt
oz tamari soy sauce
Instructions
1: Toss the cubed tofu in the vegetable broth, salt, and pepper and let marinate while you prepare the sauce or up to 1 day in advance. 2: Heat a large skillet over medium heat and add the sundried tomatoes with oil included. 3: Add in the garlic and onion and sauté for 2-3 minutes until fragrant. 4: Add the Italian seasoning and tomato paste, and stir for about 30 seconds to caramelize the tomato paste. 5: Add the tamari, coconut milk, and nutritional yeast and stir to combine. Increase heat to bring to a boil, and then reduce heat so it’s at a gentle simmer. 6: Gently stir in the tofu and its marinade, and simmer over low heat, uncovered, until the tofu has taken on the color of the sauce, about 5 minutes. 7: Stir in the lemon juice and spinach.
