Saucy Veggie Meatballs

Delicious vegan meatballs made with black beans, mushrooms, and wholesome oats, served with marinara sauce and garnished with fresh parsley. Easy to prepare and perfect for a healthy dinner option.

What you need

cup marinara sauce

cup rolled oats

can black beans

tsp smoked paprika

tsp garlic

tsp ground black pepper
Instructions
1: Add oats to a food processor and gently pulse. 2: Add the mushrooms, beans, garlic, onion powder, paprika, oregano, tamari, salt, and pepper to the food processor. Pulse until the mixture is combined, not puréed. 3: Stir in the parsley and let sit for 5 minutes. Shape into meatballs about 2 tbsp sized and place on a baking sheet. 4: Heat the broiler to low and drizzle the meatballs with olive oil. Broil meatballs until golden and firm, about 7 to 10 minutes. 5: Meanwhile, heat marinar sauce in a pot. Pour warmed sauce over cooked meatballs and top with parsley and nutritional yeast.
