Creamy White Bean Corn Dip

What you need
green bell pepper
can canned white cannellini beans

tsp ground black pepper
jalapeno

lime
cup corn

yellow onion

tsp fine sea salt

tbsp chipotle in adobo

clove garlic clove
cup mayo

tbsp yogurt
Instructions
1. Preheat the oven to 400° F. Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and cook until fragrant, about 5 minutes. 2. Stir in the garlic, green pepper, jalapeno, salt, and pepper. Cook until tender and fragrant, about 5 minutes. Remove from heat. 3. Add the corn and beans to the skillet and stir to combine. 4. In a small mixing bowl, stir together the plant-based mayo, yogurt, chopped chipotle peppers, and lime juice. 5. Add the sauce into the skillet and stir well to combine. 6. Bake until warm and bubbly, about 15-20 minutes. Top with cilantro, scallions, and avocado. Serve with tortilla chips.
