What you need

tbsp smoked paprika

tsp ground black pepper

cup vegetable broth

bunch baby spinach

clove garlic

silken tofu

tsp cayenne pepper
roasted red pepper

sundried tomatoes

oz pasta

tsp fine sea salt
Instructions
1: Cook the pasta in salted boiling water according to package instructions until al dente. Before draining, reserve 1 cup of the pasta water. 2: Add the red peppers, tofu, garlic, tomato paste, paprika, salt, pepper, and veggie broth to a blender and blend until smooth and creamy. 3: Transfer the sauce to a pot and warm it up over medium heat, stirring occasionally. 4: Add the pasta to the pot and toss to coat. Add a splash of pasta water if needed to thin the sauce. 5: Stir in the greens and cook until wilted. Garnish with red pepper flakes and fresh herbs. Enjoy!View original recipe
