cup corn

oz shiitake mushrooms
bunch green onion

cup onion

bunch baby bok choy

oz sesame seed

tbsp low-sodium soy sauce

cup low-sodium broth

Instructions
1: Heat the olive oil in a pot over medium heat. 2: Add the mushrooms, onion, garlic, and ginger, and cook until tender, about 3-5 minutes. 3: Add the bok choy to the pot. Cook 1-2 minutes per side or until slightly charred and wilted. 4: Add the broth, soy sauce, rice vinegar, and sriracha. Add the noodles and bring to a boil. 5: Lower heat and simmer until noodles are soft and fully cooked, stirring occasionally, for about 4 minutes. 6: Stir in the tofu and corn and remove from heat. 7: Serve with sesame seeds, green onion, and chili sesame oil.
