1. Heat a large skillet over medium heat. Add the apples, maple syrup, vanilla, cinnamon, nutmeg, and lemon juice and stir well to combine. Cook, stirring frequently, until the apples are soft and tender and the sauce has started to thicken, about 10 minutes. 2. Add 1 cup of the sliced apples to a blender with the milk and blend until smooth. 3. For microwave: combine the milk, rolled oats, and sea salt in a deep microwave-safe bowl. Microwave on high for 3 minutes, or until thickened. Carefully remove bowl, stir and let stand 1 minute before serving. 4. For stovetop: Bring the milk and salt to boil in a medium sized saucepan. Stir in the rolled oats and reduce the heat to medium. Cook uncovered about 5 minutes, stirring occasionally, until liquid is absorbed and oats are tender. 5. Stir the chia seeds into the cooked oats. 6. Assemble your oats by placing some of the stewed apples in the bottom of the jar or bowl and topping with the cooked oatmeal. Add more stewed apples and the granola.
