1: Cook pasta according to the instructions on the package, while you prepare the sauce. 2: Heat a large skillet over medium heat and add the sundried tomatoes with oil included. 3: Add in the garlic and onion and sauté for 2-3 minutes until fragrant. 4: Add the mushrooms, stir, and sauté until they start to get tender, about 3 to 5 minutes, stirring occasionally. 5: Add the Italian seasoning and tomato paste, and stir for about 30 seconds to caramelize the tomato paste. 6: Add the tamari, coconut milk, vegetable broth, salt, pepper, and nutritional yeast and stir to combine. 7: Increase heat to bring to a boil, and then reduce heat so it’s at a gentle simmer. 8: Gently stir in the pasta and simmer over low heat, uncovered, until the pasta has taken on the color of the sauce, about 5 minutes. Stir occasionally but gently so that the pasta does not break apart. 9: Stir in the spinach and lemon juice. Cook just until spinach is wilted. 10: Top with chopped parsley right before serving.
