A delightful and easy-to-make one-pan meal featuring Mediterranean flavors with rice, vegetables, beans, and optional toppings, perfect for a simple dinner.

1. Preheat oven to 350°F. 2. To a 9x13 or similar casserole dish add the rice, spinach, white beans, tomatoes, artichoke hearts, olives, red onion, lemon juice, olive oil, garlic powder, Italian seasoning, sea salt, and black pepper. Stir together to evenly combine, then add the broth, stirring again to evenly combine. 3. Cover dish with a baking sheet and bake for 40 minutes. Then, take the dish out and stir. Cover again and bake for 20 more minutes, or until the rice is fully cooked. 4. Uncover and bake for another 10 minutes. Remove from the oven and let sit 5 minutes before serving. Top with dairy free feta and parsley and enjoy!
