Spinach Artichoke Dip

A healthy and creamy spinach artichoke dip made with raw cashews, garlic, cauliflower, and a blend of vegan ingredients. This dish is perfect for serving with tortilla chips or veggies and makes for a great appetizer or snack.

1: Preheat oven to 350°F. Grease an oven-safe dish and set aside. 2: In a large microwave-safe bowl, combine cashews, garlic, cauliflower, and water. Cover lightly with plastic wrap. Microwave on High until the cauliflower and cashews are soft, about 5 to 7 minutes. 3: Add softened veggie mixture to a blender and blend until smooth. 4: Add the mayonnaise, nutritional yeast, miso, mustard, lemon juice, salt, and pepper and blend until smooth. 5: Add the artichokes and spinach and pulse (don’t blend) until just combined. 6: Transfer to the prepared oven dish and bake until bubbly, about 30 minutes. Increase oven to a broil and let broil about 3 mins, until starting to brown in some places. Serve with chips or veggies and enjoy!
