A delightful one-pan vegan lentil dish featuring sun-dried tomatoes and coconut milk, perfect for a meal that serves four. This is a simple and delicious recipe that combines aromatic garlic, onion, and Italian seasoning with soft red lentils and nutrient-rich spinach.

1: Heat a large skillet over medium heat and add the sun-dried tomatoes with oil included. Add in the garlic and onion and sauté for 2-3 minutes until fragrant. 2: Add the Italian seasoning and tomato paste, and stir for about 30 seconds to caramelize the tomato paste. 3: Add the lentils, tamari, vegetable broth, coconut milk, and nutritional yeast and stir to combine. Increase heat to bring to a boil, and then reduce heat so it’s at a gentle simmer. Cover and cook, stirring occasionally, for 15 - 20 minutes until the lentils have softened. 4: Stir in the lemon juice and spinach. Cook just until spinach is wilted. Top with chopped parsley right before serving.
