1: Toss the cubed tofu in the vegetable broth, salt, and pepper and let marinate while you prepare the sauce or up to 1 day in advance. 2: Heat a large skillet over medium heat and add the sundried tomatoes with oil included. 3: Add in the garlic and onion and sauté for 2-3 minutes until fragrant. 4: Add the Italian seasoning and tomato paste, and stir for about 30 seconds to caramelize the tomato paste. 5: Add the tamari, coconut milk, and nutritional yeast and stir to combine. Increase heat to bring to a boil, and then reduce heat so it’s at a gentle simmer. 6: Gently stir in the tofu and its marinade, and simmer over low heat, uncovered, until the tofu has taken on the color of the sauce, about 5 minutes. 7: Stir in the lemon juice and spinach. Cook just until spinach is wilted. Top with chopped parsley right before serving.
