A completely dairy-free, vegan, and gluten-free street corn pasta salad that's addicting. This salad features small pasta with charred corn, diced vegetables, and a creamy chipotle dressing, perfect for a refreshing side dish or light meal.

1: Bring a large pasta pot of water to a boil over high heat, then add a few pinches of sea salt to the water. Add the pasta, stir, and cook according to package instructions. When the pasta is cooked, drain and rinse with cold water. 2: Heat olive oil over medium-high heat in a large skillet. Add the corn and cook for 2-3 minutes undisturbed until charred. Stir and cook another 1-2 minutes until warmed through. Remove and set aside to cool. 3: Meanwhile, make the dressing by whisking or blending all ingredients until smooth and creamy. 4: Add the salad ingredients to a large salad bowl and toss in half of the dressing. Add the pasta and top with remaining dressing to serve.
