A delicious and healthy raw vegan pesto pasta that serves 2. Made with fresh basil, baby spinach, walnuts, garlic, lemon juice, and nutritional yeast blended into a pesto sauce, served with zucchini noodles and topped with grape tomatoes and pine nuts.

1: To a food processor or small blender, add the basil, spinach, walnuts, garlic, lemon juice, nutritional yeast, and sea salt and blend/mix on high until a loose paste forms. 2: Add olive oil and continue blending, scraping down sides as needed. Then add 3 Tbsp water at a time until thinned out. You should have a thick but pourable sauce. 3: Cut both ends off zucchini and use a spiralizer to create noodles. Repeat for the second zucchini. 4: Toss the zucchini noodles with the pesto and top with tomatoes, pine nuts, and basil.
