1. Preheat the oven to 400° F. Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and cook until fragrant, about 5 minutes. 2. Stir in the garlic, green pepper, jalapeno, salt, and pepper. Cook until tender and fragrant, about 5 minutes. Remove from heat. 3. Add the corn and beans to the skillet and stir to combine. 4. In a small mixing bowl, stir together the plant-based mayo, yogurt, chopped chipotle peppers, and lime juice. 5. Add the sauce into the skillet and stir well to combine. 6.
