A flavorful and creamy Coconut Lime Curry Tofu that features crispy tofu cubes simmered in a rich coconut lime curry sauce. This dish is garnished with cilantro and can be served with rice or quinoa for a delicious and nutritious meal.

1. Heat olive oil in a large skillet over medium heat. Once warm, add the tofu and cook until crisp on the bottom, about 5 minutes. Flip and let crisp on the other side. Repeat until crisp all over. Pour in the coconut aminos and toss to coat the tofu. Let cook about 1 more minute. 2. Remove the tofu from the pan and use the same pan to make your sauce. Add the remaining 1 tablespoon of olive oil to the pan and let warm. Once the oil is warm, add the garlic, ginger, cumin, garam masala, curry powder, and turmeric. Stir and cook 2 to 3 minutes, stirring frequently. 3. Pour in the crushed tomatoes, coconut milk, and sea salt. Stir well then let simmer until it starts to thicken, about 15 to 20 minutes. 4. Add in the tofu, lime juice, and coconut aminos, and gently stir to combine. Remove from heat and top with cilantro. Enjoy!
