A delicious vegan side dish featuring thinly sliced yellow potatoes layered with a creamy, cheesy sauce made from coconut milk and nutritional yeast, perfect for holiday menus.

1: Preheat the oven to 350 degrees F. 2: Heat olive oil in a large pot over low-medium heat and sauté the shallots and garlic until tender. 3: Add the mustard, coconut milk, vegetable broth, salt, pepper, nutritional yeast, and thyme and bring to a simmer. 4: Add the sliced potatoes and simmer until the potatoes soften and the sauce thickens, about 10 mins. 5: Add the potato mixture to an oven-safe cast iron skillet or casserole dish and cover with foil. 6: Bake for 40 minutes. Remove the foil and bake for an additional 20 to 25 minutes until the potatoes are very tender and the top has browned. (Broil for 2 mins for extra browning.) 7: Garnish with more thyme and enjoy warm.
