1: Cut your peaches in half, and remove the pits. 2: On the cut side, drizzle with olive oil and sprinkle with salt. Brush or use your hands to massage the oil and seasoning all over the peaches. 3: Grill the peaches on a grill pan, or BBQ until charred with grill marks, and soft but not mushy. 4: Toast the pistachios in a dry skillet over medium heat until golden brown and they give off a rich, toasty fragrance, about 1 to 2 minutes. 5: Add the peaches to a bowl and top with yogurt, toasted pistachios, and a drizzle of agave or maple syrup. Garnish with fresh mint.
