This creamy vegan chickpea curry is packed with flavor, plant-based protein, and aromatic spices. Easy to make and gluten-free.

Heat olive oil over medium-high heat, in a large pot.
Add the onions, tomatoes, sea salt, and ground black pepper. Lower heat to medium and simmer until onions are soft and tomatoes are heated through, about 10 minutes.
Add the chickpeas, garlic, garam masala, curry powder, and cumin. Stir to combine.
Stir in the coconut milk and bring to a boil. Then, reduce heat to medium-low and simmer for 10 to 12 more minutes until the curry starts to thicken.
Remove form heat and top with fresh lime juice. Stir well to combine. Serve with brown rice or quinoa and enjoy!
